Tiết canh (Tiet canh) is raw blood soup - Cat Ba, Vietnam

Blood soup (tiết canh) is made with raw blood of ducks or geese (sometimes pigs), with peanuts and herbs on top.­ This is the typical protein-rich breakfast of the country people in Northern Vietnam, but is very dangerous because of the H5N1 bird flu virus.­ The Vietnamese government is promoting public awareness about the risks, but try to explain bird flu to the country people.­.­.­

Raw blood soup (tiết canh in Vietnamese) is a dish made with raw blood of ducks or geese (sometimes pigs), with peanuts and herbs on top.­

I am a White American Male of 52 years and had the pleasure of sharing this dish with the family of one of my co-workers. Extremely flavorful!! At the time, I could not understand why some would not eat it. Then I was told what I was eating. What a wonderful dish. The peanuts really set me to eat more and more, but there wasn't enough of it. Thank you to whoever made this dish!

This is almost never eaten for breakfast, at least now where I am from. This is typically a lunch or dinner addition. It requires a very skilled person to prepare and have it coagulate correctly. This is usually prepared by someone you know in town that has carefuly selected healthy animals, although generally by general inspection not medical. There is more awareness so there are doses of shots for animals now regularly distributed. Country people are well aware. Not that many people stopped eating burgers in America when mad cow was going around.
